*** Pick fruit while still a little greenish. After picking the fruit place in water containing cooking soda (about 1 tbs for 4 cups figs). Then put drained un-stemmed figs in a pot using 2 cups of granulated sugar to 4 cups of fruit. It is not necessary to add water, but if figs are exceptionally dry you may add 2 tbs water to get started. After figs are cooked you may place them in sterilized jars with sterile covers and sealed.
