Creole-Style Rice Salad

3/4 lb. seasoned pork sausage
One10 oz. pkg. frozen sliced okra and frozen corn**
1 cup quick cooking rice
1 cup chopped red pepper
1 cup chicken broth
1 bay leaf, crumbled
1-1/2 tsp. chili powder
1/2 to 1 tsp. thyme, crushed
Dash to 1/8 tsp. cayenne pepper

Break up sausage in microwave safe mixing bowl and micro-cook 5 minutes at high; stir halfway through cooking time. Drain excess oil. Stir in remaining ingredients. Micro-cook at high 15 to 18 minutes or until rice is tender and liquid absorbed.

Makes 6 to 8 servings

*Recipe developed for 600 to 700 watt microwave ovens.

**One package (16 oz.) frozen southern style vegetables can be substituted for corn and okra.
