Winter Pear Salad

2 pears, cored and sliced
1 qt. torn spinach
1 qt. torn lettuce
Lemon Nut Dressing

Combine pears, spinach and lettuce. Drizzle with Lemon Nut Dressing and toss.

Makes 8 servings

Lemon Nut Dressing:

Spread 1/3 cup coarsely chopped walnuts in shallow pan and toast at 350F 10 to 12 minutes. Combine 1/3 cup vegetable oil, 3 tablespoons lemon or lime juice, 2 tablespoons vinegar, 1/2 tablespoon salt, 1/4 teaspoon each sugar, crushed tarragon and grated lemon or lime peel and 1/8 teaspoon each pepper and ground nutmeg; mix well.

Makes about 1 cup
