Spring Salad

1 head iceberg lettuce
1 can (11 ounces) mandarin oranges
1 pint strawberries
1 package (4 ounces) Parmesan
1/2 cup sliced almonds
1 bottle (8 ounces) Zesty Italian dressing

Special Utensils: large salad bowl

Preheat/bake oven: 350F.

Wash the lettuce; drain and then tear into pieces. Put in a large bowl. Drain the can of mandarin oranges; add to lettuce. Clean, hull and slice the strawberries, add to bowl. Grate the package of fresh Parmesan cheese; add to salad bowl. Toast the almonds at 350F for 5 minutes. Let cool a few minutes, then add to salad bowl. Just before serving, pour on the entire bottle of Zesty Italian dressing. Toss well and serve.

In place of the strawberries, you can use 2 cups of sliced plums OR 2 cups sliced nectarines. A tart fruit is best.
