Round Rock Salad

8-10 potatoes, boiled, not peeled
1 lb. bacon, fried and crumbled
2 yellow onions, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
3 cloves garlic, chopped
3 boiled eggs, chopped
1 jar pimento pepper
2 cups Miracle Whip
1 cup yellow mustard
1/2 cup sugar
3 tablespoons salt
3 tablespoons black pepper
3 teaspoons creole seasoning

Preheat/bake Oven: 250F.

Saute onions, peppers and garlic in bacon fat. Add crumbled bacon, chopped eggs and pimentos. Set aside and keep warm. In large oven proof bowl, cube potatoes, but leave skins on. Add bacon mixture and all remaining ingredients. Mix well. Place in warm oven until thoroughly heated. Warming enhances flavors!

Serve hot!
