Rice Broccoli Salad

- 2 cups cooked rice (can use instant rice)
- 4 hard boiled eggs, chopped fine
- 1 cup mayonnaise
- 3/4 cup Italian dressing
- 1 teaspoon mustard
- 3 cups broccoli, chopped (flowers only, not stalks)
- 1 cup Cheddar cheese, shredded
- Parsley flakes, for garnishing, optional
- Pimientos, for garnish, optional
Mix all ingredients except for parsley and pimientos, and spoon into your favorite serving dish. Garnish with parsley flakes and pimientos.
