Chicken Jambalaya Salad

1/4 cup reduced-calorie mayonnaise
2 tbs water
1 tbs chopped fresh parsley
1 tsp lemon juice
1 tsp sugar
1/8 tsp hot pepper sauce
1-1/2 cups cooked rice
1 cup quartered yellow cherry tomatoes, or 1 med yellow tomato, diced
1/4 cup chopped sweet red pepper
1/4 cup sliced green onions
1/2 cup (3 oz) cooked small shrimp
5 oz white chicken, drained
Shredded lettuce

To make dressing:
In cup, combine mayonnaise, water, parsley, lemon juice, sugar and hot pepper Sauce; set aside.

In medium bowl, combine remaining ingredients except lettuce. Serve chicken mixture on lettuce. Drizzle with dressing.

Makes 4-1/2 cups salad or 3 servings.
