Cook pasta according to directions on package. Steam crawfish in two tablespoons of water in a glass covered dish for five minutes or until cooked on high in microwave. Microwaves vary so adjust time accordingly. Season to taste with creole seasoning.
Dice turkey ham and potatoes, slice black olives, Spanish olives with pimentos, and shred Mozzarella and cheddar cheese. Drain and rinse pasta. Mix together crawfish, turkey ham, olives, tomatoes, mushrooms and cheeses. Add to hot pasta.
Make Italian dressing according to directions on package, using red wine vinegar and olive oil. Pour entire contents over pasta salad and mix thoroughly. Serve warm or chilled. Refrigerate any leftovers. Salad can be made ahead and refrigerated for several days.
