Neopolitan Vegetable Salad

1 large tomato, diced
1 zucchini squash, quartered and sliced
1 yellow squash (small crookneck), quartered and sliced
1/2 cup chopped celery
1/2 cup chopped bell pepper
1/2 cup chopped onion
3 green onions, sliced
1/2 cup artichoke hearts, quartered
1 cup pitted ripe black olives
1/2 to 1 tsp salt
1/4 tsp black pepper
1 cup Italian salad dressing
1 tsp sugar
1/2 tsp anchovy paste
1/4 cup grated Parmesan cheese

Toss together all vegetables and olives and sprinkle with salt and pepper. For the dressing, add sugar and anchovy paste to the salad dressing and whip until smooth. Pour over the vegetables and toss. Top with grated Parmesan cheese.
