Spicy Bean and Bacon Slaw
- 3 cups very thinly sliced cabbage
- One 16 oz can dark red kidney beans, rinsed and drained
- 1 cup (4 oz) finely diced cheddar cheese
- 1/2 cup sliced celery
- 1/2 cup diced green pepper
- 2 tbs minced parsley
- 1 cup picante sauce
- 5 crisply cooked bacon sliced, crumbled
Combine all ingredients except bacon; toss lightly. Chill. Toss and top with bacon to serve.
Makes 6 servings, about 7 cups slaw.
