Lemon Sauce 3

1/2 cup Softened Butter
1/2 cup Sugar
1/2 cup Lemon Juice
2 tsp Grated Lemon Rind
1 cup Boiling Water
1 Egg White
2 tbs Brandy

*** Cream butter with sugar. Add lemon rind and juice. Just before serving, add boiling water and brandy. Beat egg white till stiff but not dry fold in. Place lemon sauce in bowl for serving with plum pudding (see recipe). This can also be used with a variety of recipes which requires a light tangy sauce.
