Fresh Celery and Tomato Sauce

1 tbsp. vegetable oil
1 cup chopped onion
3/4 cup water
2 cup finely diced celery
2 cup diced tomatoes
1-1/2 tsp. basil leaves, crushed
1/8 tsp. ground black pepper
1 tbsp. lemon juice or dry red wine

In a medium saucepan heat oil until hot. Add onion; saute until transparent, about 5 minutes. Add water; bring to a boil. Add celery; reduce heat and simmer, covered, for 5 minutes. Add tomatoes, basil, black pepper and lemon juice; simmer, covered,, until vegetables are very soft and flavors are blended, about 10 minutes, stirring frequently and adding more water if needed. Serve over fish, chicken or eggs.
