Spa Tomato Sauce

1/4 cup chopped onions
2 cloves garlic
1 tbsp. olive oil
3 cans (16 oz. each) no salt added tomatoes
2 cans (15 oz. each) low sodium tomato juice
1 tbsp. canned tomato puree
8 basil leaves
1 tsp. dried oregano
1 tsp. dried thyme
1 tsp. black pepper
1 bay leaf

Saute onions and garlic in olive oil in medium (5 qt.) saucepan on medium heat. Add all canned tomato products and seasonings. Once sauce begins to simmer, turn to medium low heat, cover and stir occasionally. Can be used in pasta dishes as well as vegetable lasagna.
