Oyster Souffle

1 pt. oysters
1 pt. milk
3 eggs, beaten
1 tsp. salt
1 tsp. onion, grated
1 cup cracker crumbs, unsalted
1/3 tsp. accent

Cut oysters in pieces. Add beaten eggs to milk Combine with oysters and add salt, accent, onion and cracker crumbs. Bake in a greased casserole 325F for about one hour. (A little of the oyster liquid should be added to the milk in mixing to enhance flavor. Add if mixture seems too dry).

Makes 6 servings.
