Crawfish 1

1 pound phyllo
1 pound butter
1 pound crawfish
1 cup green onions
1 cup chopped celery
1 cup parsley
1 tablespoon paprika
1 can cream of mushrooms
1/2 cup dry sherry
1/2 cup sour cream
3 caps shredded Swiss cheese

Preheat oven to 350F. Melt 1/2 pound butter. Unfold phyllo, keeping it covered with damp cloth. Brush butter over inside of 8 x 12 inch pan. Place one sheet of phyllo in pan, and butter. Continue, using eight sheets. Set aside. Saute crawfish and vegetables.

In 1/2 pound butter, add remaining ingredients, including seasonings. Pour crawfish into phyllo-lined pan. Sprinkle cheese over crawfish. Butter remaining phyllo and cover mixture in pan. Use 10 sheets, buttering each with pastry brush. Seal all around pan by folding phyllo one on sides and brushing with butter again. Cut into twelve pieces. Do not cut through bottom layer. Bake at 350F for 45 minutes or until brown and crispy. Serve as soon as possible.
