Shrimp Fritters

1 pound medium shrimp
3 egg whites
2 cups yellow cornmeal
4 cup light vegetable oil
Creole seasoning, to taste
One 16-ounce bottle thousand Island salad dressing
2 teaspoons parsley flakes

Peel and clean shrimp. Season shrimp with Creole seasoning to taste. Sprinkle parsley flakes over shrimp. Separate 3 eggs placing whites in mixing bowl. Whip egg whites until fluffy and peaks are visible. Add corn meal to egg white, stirring until smooth. Preheat vegetable oil in fry pan on medium heat until hot. Drop shrimp in mixture, then in hot oil. Brown both sides. Drain on paper towel. Use dressing as a dip.

Serves 4.
