Saute onions and celery in butter. Remove and set aside. Saute oysters in butter until ends curl. In bowl, mix together soup, cream cheese, spinach and pepper. Add mixture to oysters and seasonings. Pour into quiche dish and sprinkle with Parmesan cheese. Bake at 350F for 20 minutes. This dish can either be served with baked chicken or roast duck, or be used as an appetizer.
