Shrimp Stew 1

1/2 cup oil
1/2 cup flour
1/2 cup chopped onions
1/2 cup chopped celery
1/2 cup chopped green onions
1/4 cup chopped parsley
3 cloves minced garlic
2 lb shrimp, peeled
1-1/2 cups hot water
1-1/2 tsp Salt
1/2 tsp black pepper
1/4 tsp red pepper

In 1 quart measuring cup, blend together oil and flour. Cook in microwave on high 7 minutes. Stir - cook 2 minutes longer. Add onions and celery and garlic. Cook on high 3 minutes. Pour into 4 quart casserole. Stir in shrimp water and seasonings. Cook on high 12 minutes. Add green onions and parsley. Cook on high 2 minutes. Serve over rice.
