Stir Fry Shrimp

2-1/4 inch slices gingerroot, peeled
1 large clove garlic, pealed
2 tbs soy sauce
1 tbs dry sherry
2 tbs ketchup
1 tbs sugar
Pinch cayenne pepper
2 tbs peanut oil
1 lb shrimp, peeled and patted dry
2 green onions, cut in 1 inch pieces

Crush gingerroot and garlic together and set aside. Mix next 5 ingredients and set aside. Heat oil in wok until hot. Add gingerroot and garlic and stir try for 10 seconds. Add shrimp and stir fry for 3 minutes or until pink. Add green onions and stir fry for 30 seconds. Add soy sauce, dry sherry, ketchup, sugar, cayenne and stir try for 30 seconds. Serve immediately.
