Fried Eggplant 2

Peel and slice (1/4 inch thick) eggplant crosswise. Soak in slightly salted cold water for 30 minutes. Drain in colander. Fry in hot deep fat until nicely browned on both sides. Place on platter and sprinkle with sugar. Good with roast or fried chicken. Slices may also be dipped in thin batter and fried like pancakes.
