Pasta Primavera

- 1/2 pound whole grain pasta
- 8 cups water
- 3 cups broccoli
- 1/2 cup snow peas, threads removed
- 1 carrot
- 1/2 stalk celery
- 1/2 small red onion, sliced
- 1 tablespoon parsley, minced
- Dressing:
- 1/4 cup virgin olive oil
- 1/4 cup apple cider and balsamic vinegar
- 2 cloves garlic, minced
- 1 tablespoon basil, oregano, rosemary, mixed
- 1 teaspoon sea salt
Cook pasta, drain. Mix dressing. Set aside. Cut vegetables, cook about 5 minutes. Drain. Toss dressing with pasta and vegetables. Garnish.
