Vegetable Kabobs

1 medium yellow crookneck squash
1 medium zucchin1 squash
1 medium sweet onion
1 medium eggplant
15 medium mushrooms
3 medium tomatoes, quartered
2 tablespoons olive oil
2 cloves garlic, minced
2 teaspoons Creole seasoning.

Cut yellow squash, zucchini, onion and eggplant into cubes. Combine with mushrooms and tomatoes in a medium mixing bowl. Combine olive oil, garlic an seasoning in a small bowl. Drizzle over vegetables and toss lightly to coat. Thread vegetables on skewers. Place on microwave-safe tray. Cover with waxed paper. Microwave on High 4-5 minutes or until vegetables are tender.

Serves 8.
