Preheat oven to 350F. Saute onions, peppers and ground beef. Peel eggplants, slice and cut into 3/4 Inch chunks. Parboil 8 minutes. Grease a 9 x 12 inch dish with butter. Sprinkle one-half of stuffing across bottom. Put one-half of eggplant on top of stuffing. Mix beef, onions, peppers and tomatoes. Put on top of eggplant. Put one-half mozzarella cheese on top. Follow this with remaining eggplant and mozzarella cheese. Top with remaining stuffing and Romano cheese. Bake uncovered at 350F for 45 minutes. Serve in pasta bowls with a white wine.
