Orange Glaze Yams

4-5 medium yams or 1 large can yams
1/2 cup light brown sugar
1/3 cup white sugar
1/3 cup honey or Steen's syrup
2 tablespoons butter or margarine
1 tablespoon vanilla
2 tablespoons frozen orange juice
2 teaspoons lemon juice, divided
1/4 teaspoon cinnamon
3/4 cup water from yams

Preheat oven to 350 F. If using fresh yams, wash and cut into four pieces. Place them in a heavy pot; cover with water and boil until tender, using 1 teaspoon lemon juice to keep yams from getting dark. Remove yams from water; reserve 3/4 cups water. To this water add brown sugar, white sugar, honey or syrup, butter, vanilla flavoring, orange juice, 1 teaspoon lemon juice and cinnamon. If using the canned yams, use 1 large can of whole yams and use 1/2 cup juice from canned yams. Can be cooked on top of stove in heavy pot or baked in oven for about 35-40 minutes. Serve with any meal.
