Mashed Potatoes

- 5 pounds potatoes
- 1/2 cups skim milk
- 6 tablespoons non-fat sour cream
- 1-1/2 tablespoons light butter
- 3 inch slice of Velveeta light cheese
- 3 tablespoons grated Parmesan cheese
- 1-1/2 teaspoons salt
- 1/2 teaspoon Creole seasoning
- 1-1/2 teaspoon garlic powder
- 1/2 teaspoon pepper
Peel and boil potatoes until soft. Drain and return to pot. Lower temperature and add remaining ingredients. Mix until smooth. Adjust seasoning if desired.
Serves 12.
