Mashed Potatoes

5 pounds potatoes
1/2 cups skim milk
6 tablespoons non-fat sour cream
1-1/2 tablespoons light butter
3 inch slice of Velveeta light cheese
3 tablespoons grated Parmesan cheese
1-1/2 teaspoons salt
1/2 teaspoon Creole seasoning
1-1/2 teaspoon garlic powder
1/2 teaspoon pepper

Peel and boil potatoes until soft. Drain and return to pot. Lower temperature and add remaining ingredients. Mix until smooth. Adjust seasoning if desired.

Serves 12.
