Stuffed Eggplants 2

4 eggplants
1 Onion, chopped
1 Bell pepper, chopped
1 Garlic clove, chopped
1 Jalapeno, chopped
1 fresh tomato, chopped
1-1/2 cups Rice, cooked
Mozzarella Cheese
Bread crumbs
Olive Oil

Cube eggplant and saute in olive oil with onion, bell pepper, garlic, jalapeno pepper until wilted. Add fresh chopped tomato. Cook 10 minutes. Add cooked rice.

Take eggplant shells and fill with eggplant mixture. Add bread crumbs, mozzarella cheese and sprinkle with paprika. Bake in oven at 350F until cheese melts or microwave until cheese melts.
