Summer Squash 1

2 lb squash white or yellow
1 cup margarine
15 Ritz crackers, crumbled
2 eggs beaten
Salt and pepper, to taste
1 tsp Tabasco
1 cup grated American cheese

Slice squash and cook until tender. Saute onions in 1/2 cup of margarine and mix with cook and drained squash.

Add crumbled crackers, egg, seasoning and cheese. Place in two quart casserole dish.

1/2 cup Ritz crackers, crushed into crumbs
1 cup margarine, melted

Combine cracker crumbs and melted margarine. Top the squash mixture. Bake 30 minutes at 350F, or until hot and bubbly.
