White Beans and Cheese

1 lb white beans
1 med onion, chopped
1 bell pepper, chopped
1 stalk of celery, chopped
1 lb cheese

Boil beans, add onion, pepper and celery. Cook until creamy. Serve hot over rice. Add one or two slices of cheese over beans and rice. Serve with any meat dish.
